Summer breakfast

A quick, healthy and nutrient dense breakfast that can be adapted to your own health needs and taste preferences. This recipe is for one, just double the mix for two people. You can choose your own seasonal fruit as a topping.

1/2 banana

1 egg

1/4 cup buckwheat flour

1 teaspoon ground cinnamon


1/2 teaspoon ghee or coconut oil


Mash banana, add egg, cinnamon and flour, stir with fork until combined for a thick mixture. Heat a small frying pan, add ghee or coconut oil to grease. Place mix into pan and spread using two spoons. Cook until golden, turn and cook 2nd side. Serve with your choice of fresh or poached fruit, maple syrup or yoghurt.
